Carlos Nieto knows what it takes to make a restaurant great – world-class chefs working with first-rate meat. It’s no surprise he serves Morgan Ranch Wagyu Beef.

Now in its 25th year, Carlos’ continues to attract patrons with the imaginative creations of Chef Ramiro Velasquez. It’s precisely what you’d expect from someone who has learned his craft from the series of chefs for which Carlos’ is famous. And yet Valasquez has made the cuisine uniquely his own with incredible culinary diversity that is based on the special and unusual ingredients.

Most notably, the use of Morgan Ranch Wagyu Beef in his herb crusted Filet Mignon. The featured entrée that has helped the restaurant to continue to earn accolades from pundits and discerning diners alike.
